With Fall right around the corner and the kids back in school, it’s time to start embracing the cooler and busier days to come. Everyone knows that time is in tight supply for busy families, but the least I can do today is help you save a little bit of time and trouble when it comes to meal preparation. Does coming home to a healthy already prepared meal sound too good to be true? It doesn’t have to.
That’s where investing in a slow cooker comes in!
Effectively utilizing a slow cooker is arguably one of the best meal prep hacks that every family should be taking advantage of to save time.
Today I will share with you a few quick, healthy and balanced meals that you can put together using a slow cooker
Meal #1 – French Toast
Use the slow cooker to treat your kids to an epic weekend or school day breakfast that you may not otherwise have time to prepare.
4 slices whole grain bread ( cubed into 3/4’ pieces)
2 whole eggs
1 cup soy or cow’s milk
2 tsp cinnamon
½ tsp vanilla extract
2 Bananas, sliced
1 box of blueberries
- Place bread cubes in slow cooker.
- Whisk eggs, milk of choice, cinnamon and vanilla extract
- Pour over bread and set on low for 4 hours
- Top with sliced bananas, blueberries and maple syrup.
Meal #2 – Lentil Soup
I always stress the importance of incorporating protein-rich meat alternatives like lentils into people’s diets, but sometimes the long cooking times or the idea of eating them out of a can deters people. That’s where this recipe comes in.
1 cup lentils
2 cups of kale, chopped
2 medium carrots, chopped
2 celery stalks, chopped
½ onion, chopped
1 tomato, diced
1 cup mushrooms, chopped
2 tsp chili powder
2 tsp garlic powder
Parsley, to garnish
1 whole grain baguette
Place 5-6 cups of water with the sum of the ingredients and spices, aside from the kale, in the slow cooker on high for 7-8 hours.
Stir in kale for a few minutes right before serving alongside a sliced whole grain baguette.
Meal #3 – Beef & Sweet Potato Stew
We are saving the best for last with this vintage slow cooker dish. Anything beef-related comes out of the slow cooker tasting great because of how well the tenderness is maintained.
3 sweet potatoes, cubed
3 cups low sodium beef broth
2-3 cloves of garlic, diced
2 tbsp whole wheat flour
2 tsp black pepper
2 tsp onion powder
2 tbsp BBQ Sauce or your favourite steak sauce
2lbs of your favourite beef roast variety, cut into chunks/pieces
1 tbsp olive oil
Place the beef chunks into the slow cooker before adding the flour ( mixed with black pepper) to coat the beef.
Add garlic, beef broth, BBQ sauce and sweet potatoes.
Depending on your timeline, cook on high for 5 hours or low for 11 hours.
